Chicken stew has been one of the most loved family dinner during winters while growing up. It would mean two things - happily fed tummies and a blissful motherly soul knowing that her child has eaten all the veggies
She would slyly beetroot for that lovely pinkish colour which would alure me to finish up my meals. In Bombay when the weather is very humid or hot most of the times chicken stew is usually enjoyed in the AC but now that we have a slight nip in the air chicken stew is enjoyed in its natural form and with the lovely vegetables that's available right now it's like a bonus. I usually like my chicken stew to be white in colour which is more Kolkata style but in this one my mother has added A Pinch of turmeric to make it more immunity boosting as all of us had been Down with terrible cough and cold . So here do enjoy one of my very very favourite dinner recipe from my mother's kitchen. Love and peace from our kitchen to yours
Serves: 4-5
Prep time : 10 mins
Cooking time : 20 mins
Ingredients:
1 capsicum
2 tomatoes
2 medium sized carrots
1 and a half medium sized onions
5 to 6 cloves of garlic
1 cube of Ginger
10 to 12 green beans
some green peas
2 potatoes
1 kg chicken
Tumeric
Bay leaves
Cinnamon 2-3
cardamom green coloured 4
1 tbsp ghee/butter
Salt
sugar
pepper powder
Method:
Roughly chop the seasonal veggies here we have taken
Add 2/3 tablespoon white oil ll in a cooker
Add 4 bay leaves and let it crackle
Add half of the chopped onions toss and turn and let them turn translucent
Add two tablespoon garlic
give a good mix
Add 3 broken cinnamon sticks
Add 4 broken cardamons green
Add few cloves
Saute them well
Now add chopped tomatoes ,carrots green beans and the potatoes one by one
Give a good mix all the veggies should be coated in Spice
Now add the chicken pieces
Mix them well so that everything gets nicely coated
Now at the capsicum and the rest of the onions add 2 tbsp ginger paste give a good mix
Add some peas
Add half teaspoon turmeric
Add 2 teaspoon of salt
Add half teaspoon of sugar
Add 2 teaspoon ground black pepper as per your Spice tolerance
Mix everything well again
Now add one tablespoon of ghee or you can add butter also
Mix again for the last time now
Add two cups of water ,close the lid of the pressure cooker and pressure cook for 4 full whistles
Naturally release the pressure
The stew is ready to be eaten with some rice or some butter bread toast
