This Sweet and Spicy Jerky is a bit hit! If you don't mind some spicy jerky you should defiantly give this a go.
Here is the typed recipe as promised and method.
Using lean meat. eg beef hip meat.
Onion 8g/kg
Garlic 8g/kg
Chipotle 8g/kg
White Vinager 20g/kg
Soy Sauce 125g/kg
Honey 115g/kg
Sugar 12g/kg
Cure 3g/kg
Sodium Erythorbate 0.5g/kg
Preheat smoker/oven
Step 1:
Dry at 155f 68c 1hr
Step 2
Smoke at 160f 71c 1hr
Step 3
Cook at 165 74c 1hr
Step 4
Dry 155f 68c 1hr
Dry longer if necessary Jerky should rip a bit when bent.
These times are approximate and may change on your set up.
Make sure they are spaced out and all evenly dried.
