In this video, Patricia demonstrates how to make Fabada. This is Beans and Sausage Stew, very popular in the north of Spain. If you can´t find the fabes, then use a regular white beans.
Fabada
Ingredients:
2 cups Fabes
½ white onion
1 clove of garlic
1 chorizo ( red sausage)
1 thick piece of pancetta or bacon
1 morcilla (blood sausage)
Salt
1 bay leaf
Water
Put in water the fabes overnight. And the chorizo, pancetta and morcilla in warm water for 30 minutes until you start to cook. In a pressure cooker, pour the fabes and cover with water. Add the bay leaf, chorizo, pancetta, onion and garlic. Season with salt. Let it come to a boil. When it´s boiling, low the heat at medium, and put the lid on. Cook for 20-30 minutes, depending of your pressure cooker. When the fabes are tender, remove the bay leaf and take some fabes and some liquid, the onion and the garlic out, and pour into a blender. With this purée we´ll get thicken the stew. Take the chorizo and the pancetta out as well, and cut into pieces. Pour that purée into the pressure cooker, add the morcilla, the chorizo and the pancetta in pieces. Cook for 10 minutes until the morcilla is done and all the ingredients are combined. And it´s done! This is a tasty Spanish dish. Enjoy!
