This is one of those lesser hidden dishes that should be at the forefront – Potato and Chicken Curry or known as Thai Yellow Curry. This curry crosses from Indian, Malay to Thai and is absolutely amazing. Served with boiled rice, Ajaad and roti, this is exceptional. For curry lovers, this is truly a flavour packed delicious curry.
I will show you how to make this curry from scratch right from creating the curry paste. No Western influence adding weird veggies (that is up to you as they say in Thailand) The Thai Way.
NOTE: I HAVE MADE A MISTAKE WITH THE CAPTION ON THE FILM - THE INGREDIENTS SHOULD BE 1/2 TSP CUMIN

1 kilo potatoes
400 g chicken breast
500 ml coconut milk – im using Aroy D
1 tsp salt
½ - ¾ tbsp Galangal
1 heaped tbsp Lemongrass
1 tsp Kaffir lime peel
4 pre soaked big red chilies
4 dried small chilies for heat - SORRY FORGOT TO SAY IN VIDEO
10 small garlic
6 shallots
1/2 tsp cumin powder
2 tsp coriander powder
1 ½ tbsp fish sauce
1 tbsp palm sugar
2 tBsp curry powder
1 tsp turmeric powder
1/8 tsp cardamom
Cheats way.
2 tbsp Red Thai Curry Paste
2 tbsp curry powder
1 tsp turmeric
1/2 tsp cumin powder
2 tsp coriander powder
