A NEW WAY TO BAKE : LAMINGTONS 
 
This is a cake that stole my heart as a sweet-loving kid – or rather a treat I used to steal from my grandparents’ refrigerator! One of my earliest sweet memories are the featherlight (albeit dry) shop-bought Lamingtons. This little queen of small baked goods was created in New Zealand (as determined by analysis of a 2014 study of a watercolour painting and news reports of Lord Lamington’s visit!) where it was called the Wellington and ‘stolen’ or borrowed by Lord Lamington, the governor of Queensland. It appeared in 1902 for the first time and was credited to Lord Lamington. It is widely recognised as Australian, although a recent study of his visit to New Zealand as well as a watercolour painting revealed it had indeed originated in New Zealand.  A Lamington has two main components, and there have been huge amounts of effort 
to elevate it (Nadine Ingham in Sydney famously dipped her sponge in a coconut panna cotta). Lamingtons are best made the day before.
