🥣 Ingredients for vegan provolone/cheddar cheese:
400ml | 14oz full fat coconut milk
120ml | 1/2cup water
1/2tsp lemon juice
2tbsp nutritional yeast
2tbsp agar agar powder
1/2tsp salt
1/4tsp garlic powder
Cheese topping: red chilli flakes, parsley, lemon zest (optional)

🥣 ingredients for vegan parmesan:
150g |1 cup raw cashew
4tbsp nutritional yeast
1tsp salt
1tsp garlic powder

🧑‍🍳Cooking tips for provolone/cheddar cheese:
❗I strongly recommended to use agar agar powder not flakes.
❗Stir the cheese sauce frequently. Do not walk away from it while cooking, it will take just a few minuted for the cheese to cook.
❗Measure ingredients carefully.
❗If you want to grate the cheese, pop it in the freezer for about 30 minutes and you can gate it.

🧑‍🍳Cooking tips for vegan parmesan cheese:
❗Be careful not to over-blend the mixture, we are making dairy free parmesan, not a cashew butter😊
❗Add any spices, herbs you’d like.
❗For a nut -free cheese version feel free to use raw sunflower/hemp/ seeds.

🥣Method for 🧀 recipe 1:
Grease a mould with olive oil to prevent sticking.
Pour 400ml | 14oz full fat coconut milk into a saucepan.
Add 120ml | 1/2 cup water. You can put warm water into the empty coconut milk can to melt all the remaining coconut milk and add the water to the pan.
Pour 1/2tsp lemon juice.
Add 2tbsp nutritional yeast, 2tbsp agar agar powder, 1/2tsp salt and 1/4tsp garlic powder to the pan.
Stir well.
Cook over medium heat stirring frequently until it boils. During this process, you will see how the cheese mixture thickens. Do not walk away from it while cooking.
It must boil for 2-3 minutes to activate agar agar and set the cheese correctly.
Immediately pour into the prepared cheese mould.
Let it cool for 15 minutes at room temperature.
Cover and transfer to the fridge for at least 2 hours to firmly set.
Garnish with parsley, chilli flakes and lemon zest (optional).

🥣Method for 🧀 recipe 2:
Add 150g | 1 cup raw cashews , 4tbsp nutritional yeast, 1tsp salt and 1tsp garlic powder to a food processor.
Pulse until well mixed.
Be careful not to over-blend the mixture, we are making dairy free parmesan, not a cashew butter😊
Keep parmesan cheese in a sealed container in the fridge. You can keep it in the fridge for up to 2 weeks.
