Today I’m going to be sharing with you how to make the best potato tacos, Seriously super delicious!!! I like to make the masa and stuff them with beans and carnitas, just make them a little extra 😅 of course if you want just a simple potato taco YOU can go without adding anything else and just use regular corn tortillas. This is the way I like to eat my potato tacos and my family enjoys them so much! 🌮 Ingredients: makes 12-15 tacos
Toppings:(optional)
Refried beans
Carnitas
Lettuce
Tomatoes
Onion
Queso fresco
Crema Mexican
Filling:
Monterey Jack or queso Oaxaca
3-4 potatoes
2 roma tomatoes; chopped
1/4 onion; chopped
1 jalapeño; chopped
1 garlic clove; minced
Chicken bouillon
Salt
Black pepper
Salsa:
6 tomatillos
1 tomato
1 garlic clove
chile árbol
1 New Mexico or guajillo Chile pod
1 pulla chile pod
1/4 tsp oregano
chicken bouillon
salt
Masa:
3 cups Maseca (instant corn masa flour)
1/4 cup flour
2-2 1/2 cups warm water
3 tbsp lard, shortening or oil
1/2 tsp baking powder
Salt
