Banana Chips
Banana are one of the quickest and easiest fruits to dry, as well as one of the tastiest. Large yellow varieties, like Cavandish or Martinique, dehydrate best. Those that are all yellow or lightly brown specked will be the sweetest; avoid green or overripe bananas.
Step-by-Step
1. Peel the bananas and cut into 1/8 to 1/4 slices.
2. Cut away any bruised portions
3. Dehydrate bananas at 135 degrees F/57 C until leathery.
Note: Consume this tropical fruit dry as a snack, in trail mixes, cookies, cakes and breads or on cereal. Fried, they make scrumptious fritters.
• I used the Excalibur Dehydrator. The Excalibur 9-Tray Large Dehydrator provides 15 square feet of drying space making this the biggest and best there is! Ideal for large families and large gardens. You can also buy a 5 tray Excalibur dehydrator.
