As we near closer to Christmas, I decided to make these fun Christmas Santa Hat Cupcakes. What better time of the year then to experiment with some crazy baking ideas, right!?!? With a delicious white chocolate cupcake topped with a red velvet icing, these cupcakes are definitely a big hit with Santa fans young and old. If you do make these for little ones I suggest making them into Mini Santa Hat Cupcakes. Just pop the batter into mini muffin tins and bake for 15 mins. To be honest, I personally prefer the icing to cupcake ratio of mini cupcakes!

Ingredients:
Cupcakes
- 60g unsalted butter
- 1/2 cup sugar
- 1 tsp. vanilla extract
- 2 large egg whites
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 60g white chocolate
- 1 cup plain flour
- 1/4 cup Greek yoghurt
Icing
- 225g butter
- 60g cream cheese
- 1/4 cup buttermilk
- 1/4 tsp. salt
- 2 1/2 tsp. cocoa powder
- 1/2 tsp. vanilla extract
- 3-4 cups icing sugar
- 1/4 tsp. Red gel food colouring
