90 year old Albina and her friends Elsa and Stella make a savoury pie with humble ingredients. It's called sorta di patate in Italian, and hails from a tiny village called Pozzolo in Emilia.
For the dough: 1 kg flour 00; dry instant yeast 3g, 120ml milk and water
1 egg, 150g butter
For the filling:
2kg potatoes 200g lard, about 200g parmigiano (30months), 4/5 onions
1 teaspoon of sugar, salt, Saporita spice mix (coriander, nutmeg, cloves, cinnamon, fennel seed)
