Siraegi (dried radish leaves) soy bean paste stew and Siraegi pot rice
Today I want to share this recipe that my husband and I have enjoyed eating. Siraegi is dried leaves and stems of radish. There are many dishes that can be made with this ingredient. Siraegi soy bean stew is a very popular dish in Korea. I have only tasted siraegi pot rice in one restaurant in the LA area so far. But this dish can be made easily at home. It is very healthy, packed with vitamins and minerals, and delicious too.
Ingredients:
Siraegi soybean paste stew
60 g dried siraegi
1/2 onion: sliced thinly
3 oz oyster mushroom:shredded
1/2 Korean large green onion (daepa): sliced diagonally
1 red chili pepper: sliced diagonally
1 green chili pepper: sliced diagonally
2 tbsp Korean soy bean paste (doenjang)
1 tbsp Korean soy bean paste with anchovy and clam
1 tbsp Mirim (rice wine)
1/2 tbsp Korean chili flakes
2 tbsp perilla oil
2 tbsp minced garlic
1 or 2 tbsp sesame oil
4 cup anchovy kelp soup broth
Siraegi rice
60 g dried siraegi
2 tbsp perilla oil
2 tbsp Korean soup soy sauce
1 tbsp minced garlic
8 garlic cloves: sliced thinly
3 oz Korean radish: sliced thinly
1 Korean large green onion: chopped
3 oz oyster mushroom:shredded
Roasted seaweed: no salt, no oil
Siraegi rice seasoning sauce
1/2 tbsp Korean chili flakes
2 tbsp soy sauce
1 tbsp oligodang (Korean cooking syrup)
1 tbsp roasted sesame seeds
1 tbsp sesame oil
1/2 tbsp minced garlic
4 green onion: chopped
1/2 red chili pepper: chopped
1/2 green chili pepper: chopped
*Some radish stems are tough and you need to peel the outer layer skin after you boil them.
*Cut off the part that attach to the radish.
*Anchovy kelp broth was made from boiling 4 cups of water with one bag of anchovy kelp stock bag.
*Soak rice overnight. For cooking the rice, use less water than usual.
*You can also add perilla powder and tofu to the stew.
*If you are vegan, you can omit all the ingredients with anchovy.
*mushroom is also optional if you don’t like using mushroom.
