Easy and quick breakfast recipe with vermicelli ,scrambled eggs and some vegetables....
INGREDIENTS
Vermicelli - 1 cup
Oil - 1 tsp + 2 tbsp
Egg - 2 no.s
Mustard seeds - 1/2 tsp
Chopped ginger - 1 tsp
Green chili - 1
Curry leaves
Dry chilies
1/2 of an onion
1/4 cup green peas
1/2 of a carrot
Pepper powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Water - 2 cup
salt to taste
METHOD
Roast the vermicelli to light golden color
Heat a tsp of oil and scramble the eggs and set aside.
Heat the remaining oil , crackle the mustard seeds, fry the chopped ginger,curry leaves , dry chilies,green chilies,onion , carrot and green peas.Add in the pepper and turmeric powder.Pour in the water, add salt and bring it to a boil.Once boiled ,stir in the roasted vermicelli and cook until the water almost evaporated.then cover the pan and cook 5 minute over low flame.Finally stir in the scrambled eggs and serve ....
