DIY Orgeat Recipe - orgeat is an important ingredient in numerous classic cocktails, crucial in many tiki recipes and essential in making a killer Mai Tai.
WHAT IS ORGEAT?
Orgeat is an iconic French almond syrup that is a staple ingredient in cocktail and home bars and it’s surprisingly simple to make. It was originally made with barley until it was discovered that almonds lent much more flavour to the syrup. A touch of orange blossom water also adds a subtle floral note.

In its simplest form - orgeat is sweetened almond milk. You can go one of two ways - (1) the quick and easy route of store bought almond milk (just make sure you get unsweetened almond milk) OR (2) you can make your own almond milk at home.
You can also play around with other nuts such as pistachios, walnuts, macadamias or cashews. You can also try roasting your almonds for a darker colour and richer flavour.

INGREDIENTS
- 2 cups Almonds
- 1.25 cups Water
- 1.5 cups Caster Sugar (superfine)
- 0.5 tsp Orange Blossom Water
- 30 ml Brandy
1. Blanch your almonds by covering with boiling water for 1 minute before cooling and removing the skins
2. Blend (or finely chop) the almonds
3. Add the water and sugar into a pot on high heat
4. Once it reaches a boil, add the almonds
5. Let the liquid almost reach the boil again before turning the heat off
6. Steep for 3-8 hours
7. Use a cheesecloth to strain off the liquid
8. Transfer into a sterilised bottle
