### Caramel Sewai Kheer Recipe (Caramel Vermicelli Kheer)
#### Ingredients:
- **Almonds**: 12
- **Pistachios**: 12
- **Raisins**: 1 ½ tbsp
- **Cashews**: 12
- **Vermicelli (Seviyan)**: 1 ½ cups
- **Milk**: 1 litre
- **Green cardamom powder**: 6-7
- **Vanilla essence**: ¼ tsp
- **Khoya (Mawa)**: 3-4 tbsp
- **Sugar (for caramel)**: ½ cup
- **Sugar (as per taste)**: 3 tbsp
- **Fresh cream**: ½ cup
- **Ghee**: 2 tbsp
- **Chandi varq (Silver leaf)**: for garnish
#### Instructions:
1. **Roast the Nuts**:
- In a pan, heat 1 tbsp of ghee. Add almonds, pistachios, raisins, and cashews. Roast them on medium heat until they turn golden.
- Remove from the pan, let them cool, and chop into small pieces.
2. **Roast the Vermicelli**:
- In the same pan, add the remaining ghee.
- Add vermicelli and roast on medium to low heat until golden brown, stirring continuously to prevent burning.
- Once roasted, set the vermicelli aside.
3. **Prepare the Milk Base**:
- In a pot, bring the milk to a boil.
- Add green cardamom powder and the roasted vermicelli.
- Cook on medium heat until the vermicelli is fully cooked.
4. **Make the Caramel**:
- In a separate pan, heat the sugar (½ cup) on low heat.
- Allow the sugar to melt without stirring. Once it melts and turns a golden caramel color, pour it immediately into the vermicelli mixture.
- Stir continuously to ensure the caramel is well incorporated.
5. **Adjust the Sweetness**:
- Taste the mixture and add additional sugar (around 3 tbsp or as per taste) if needed. Stir well.
6. **Add Khoya & Vanilla Essence**:
- Reduce the heat to low and add the khoya (mawa).
- Mix well until the khoya is fully dissolved.
- Add the vanilla essence and turn off the heat.
- Let the mixture cool slightly.
7. **Add Cream**:
- Once the kheer is warm (not piping hot), stir in the fresh cream. This will make the kheer richer and creamier.
8. **Garnish and Serve**:
- Add the chopped nuts into the kheer.
- Transfer to a serving dish and garnish with remaining nuts and chandi varq (silver leaf).
- Let it rest for 3-4 hours for the flavors to meld.
