So Hasselback is just a style of slicing a vegetable but not slicing it all the way through and in this case, I used zucchini.

This is a zucchini tomato and cheese recipe we have been using for years in my Italian family, and we grill it and most recently I've converted it to an air fryer version. I don't like baking this recipe because the zucchini gets soft and I don't like that, but if you prefer a softer zucchini instead of a little crisp, then bake yours instead.
The Zucchini tomato Caprese prepared in the air fryer is a great appetizer any time of the year especially during the summer and for the holidays as it is green and red! Think Christmas!
