►A vegetarian masala curry with black-eyed beans cooked in ground paste sautéed with onions, tomatoes and spices
Ingredients:
1 ½ cups black-eyed beans
2 onions chopped
2 tomatoes chopped
1 green chilli
3 garlic cloves
½” ginger
8 curry leaves
1 Tbsp. garam masala or curry powder
1 tsp. kashmiri red chili powder
1 tsp. coriander powder
½ tsp. turmeric powder
cooking oil
few strands of fresh coriander for garnishing
salt to taste
For Tempering:
¼ tsp. mustard seeds
¼ tsp. cumin seeds
8 curry leaves
