This vegetable samosa recipe is full of great tasting herbs, spices and the ever popular potato. Potato Samosas are probably the most common vegetarian samosa that you will find as a street food in the Indian subcontinent. These vegetarian samosas are commonly known as aloo samosa. They make for a delicious vegan party food or vegetarian snack anytime.
Traditionally, the aloo samosa is served as a snack with some green chutney or ketchup. You can vary the amount of spices added as per your taste.
Ingredients for the vegetable samosa filling are as below:
amchur (dry mango) powder – 2 tsp
asafoetida – finely ground powder – 0.25 tsp
cilantro – fresh – finely chopped - amount dependent on your preference
chaat masala (Indian spice blend) – 1.5 tsp
chilies – green – fresh or frozen – finely chopped - 3 medium sized
coriander – powder – 1 tsp
cumin – 2 tsp
garam masala (Indian spice blend) – 1 tsp
garlic cloves – peeled – crushed into a paste – 15 cloves or less based on your preference
ginger – fresh – peeled and finely diced – 1 cubic inch
oil – for sauteeing the spices and potatoes – I used olive oil - 7 tbsp
peas – frozen or fresh – 1 cup, organic
potatoes – 8 medium sized, organic – boiled and crushed, semi-chunky
raisins – 3 tbsp
salt – coarse or regular – 1 teaspoon (used for mixing with water for boiling the potatoes)
salt – regular or Black Indian salt, aka Kala Namak – 1 tsp for mixing with the potato filling
turmeric - powder – 1 tsp
water – filtered – amount needed based on the size of potatoes – enough to submerge potatoes
Ingredients for the outer pastry jacket for housing the samosa filling:
Bishop's seeds – aka Ajwain (in Hindi) – 1 tsp
flour – all purpose – organic – 4 cups
oil – to mix in the flour - I use olive oil – 200 ml
salt – fine – I use Indian black salt a.k.a. Kala Namak – 2.5 tsp
water – filtered , cold – 1 cup
Separately, you will need oil for frying your samosas. I used olive oil, you may use the oil of your choice.
