Vanilla Sugar - How to make Vanilla Sugar out of used vanilla bean (vanilla powder)
Recipe for about 530g

Ingredients:
20x used or fresh vanilla pods (60g)
2 cup sugar (500g)
Preparation method:
- The vanilla pods you normally through away after using in custard or pudding should be washed and dried with kitchen paper. (if you use fresh vanilla pods you don’t have to wash them)
- Put the pods in a jar and add some sugar and shake the jar a few times.
- Fill up the jar with used vanilla pods and sugar until full.
- when full pour the vanilla-sugar mix into a bowl and remove the pods and put them on a baking tray.
- Place the baking tray on your heater or another dry/warm place in your house for 1 week. Put the sugar back into the jar.
- After one week you should be able to break the pods, if not, dry them for an additional week.
- Put the pods into a mixer and mix them finely, add the sugar and continue mixing.
- Give the mixed sugar and pods on the baking tray, mix it and dry it for another week.
- Break the sugar apart and put the pieces into a mixer, mix the sugar until fine.
- Give the sugar into a coarse sieve and sieve it, the lumps can be mixed again or used for custard or pudding.
- Sieve the sugar again through a finer sieve.
- Fill the finished vanilla sugar into an airtight container.
This vanilla sugar can be used in any dessert or baking recipe and is almost for free if you use used vanilla pods.

Vanilla sugar can be kept in a tightly closed container or jar for at least 1 year.
