KADDU KA DALCHA :
INGREDIENTS:
Mutton 300-400
Grams Onion (Chopped) 1 Medium Size
Elaichi (Cardamom) 4-5
Laung (Cloves) 4
Shah Jeera (black cumin seeds) 1/2 Tsp
DalChini Patta(Cinnamon) 3-4 Sticks
Ginger Garlic Paste 2 Tsp Salt 2 Tsp(As per taste)
Chilli Powder 2 Tsp
Haldi (Turmeric Pdr) 3-4 Tsp
Masoor or Arhar 200 Grams (Pink Lentils or Pigeon pea)
Chana Dal (Bengal gram)
Handful Curry Leaves One Bunch
Imli(Tamarind) Handful
Tomato 3-4 Medium Size
Green Chili 3-4 Oil 3-4 Tbsp
Lauki/Kaddu(Bottle Gourd) One whole
Take Arhar/Toohar along with Chana Dal in a cooker and rinse it well
Add 2 glasses of water Add green chilies, bottle gourd & tomato
Add turmeric powder & ginger garlic paste Close the cooker lid & wait for 4-5 whistles
Second Process: Take another pan and heat oil Add chopped onions and green chilies', fry onions till it gets golden brown
Add ginger garlic paste, turmeric, red chili pdr and salt Now add mutton to the gravy Wait for 4-5 whistles
Add bottle gourd, half Tsp salt & one cup water to the gravy
Close the lid and cook the gravy for 5 mins or for one whistle Take tamarind pulp & add it to the mashed lentil gravy
Now Mix both mutton gravy and lentil curry in a single pan
Add all spices and curry leaves (Garam Masala) to the curry now Boil the curry for 5mins on high flame, then keep on low flame for 5 mins
BAGARA RICE STEPS:
Add oil to the pan Then add onion to the oil and shallow fry till it gets light brown
Add ginger garlic paste Add green chilies & Garam Masala Now stir all ingredients on slow flame
Add salt to taste (1.5 Tsp) then add water Water ratio should be 1:2 (1-cup water for 2 cup rice) Add Pudina & Hara Dhania (Mint & Coriander Leaves) & then mix it well Close the lid again and then cook rice on high flame for 5-10 mins
Add rice to the boiling water & stir it well Close the lid again and then cook rice on high flame Stir the rice & check in regular interval Ensure water is absorbed and rice is cooked well You can add more water if the rice is not cooked
Then add onion to the oil and shallow fry till it gets light brown
Add ginger garlic paste Add green chilies & Garam Masala Now stir all ingredients on slow flame Add salt to taste (1.5 Tsp) then add water Water ratio should be 1:2 (1-cup water for 2 cup rice) Add Pudina & Hara Dhania (Mint & Coriander Leaves) & then mix it well Close the lid again and then cook rice on high flame for 5-10 mins

GAWAR KI PHALLI:
INGRIDENTS
Cooking oil 4 Tbsp.
Coriander 1 Bunch
Potato 2 Medium size
Onion (Chopped) 4
Medium Size Mutton 500 Grams
Cluster Beans 500 Grams
Green Chilies 4
Fenugreek leaves 2 Tsp
Ginger Garlic Paste 2
Tsp Salt 1.5 Tsp
Turmeric 3/4 Tsp
Chili Powder 1.5 Tsp
Process:
Add oil to the pan and heat it for 2 mins
Then add chopped onions Add chopped onions and fry it for 5 minutes until its light brown
Add ginger garlic paste Add turmeric, red chilly powder and salt
Add mutton and mix it well for two mins
Add half glass water & close the cooker lid for 4 whistles
Add cluster beans to the gravy & mix it well
Add potato and mix it well
Add glass of water Close the cooker lid and wait for two whistles
Add green chilies & fenugreek leaves.
Add fresh leaves if available
Add coriander leaves Keep it on low flame for two minutes before serving
