In today’s video we use our instant pot to make the easiest four ingredient congee! Congee is a rice porridge comfort food eaten in many Asian countries.
Ingredients:
3/4 cup jasmine rice
1 tbsp chopped ginger
6 chicken drum sticks
6 1/2 cups of chicken broth
Green onion (optional; for garnish)
Soy sauce and sesame oil (optional; for garnish)
Salt and pepper, to taste
Directions
1. Rinse your rice until the water runs clear
2. Add the chicken broth, chicken, rice, and ginger in a pressure cooker and cook on high pressure for 30 minutes
3. Natural release (not shown in video) and turn off the instant pot
4. Remove the chicken drumsticks, shred the meat, and mix back into the instant pot
5. Serve and garnish with green onion, salt, pepper, soy sauce, or sesame oil
