BEETROOT AND WALNUT RAITA
Ingredients
2 tablespoons beetroot puree
16-20 walnuts
½ cup yogurt
1 teaspoon red chilli powder
1 teaspoon roasted cumin (jeera) powder
Salt to taste
6-8 fresh mint leaves
Fresh mint sprig for garnishing
Method
1. Heat sufficient water in a non-stick pan. Add walnuts and blanch them. Remove from heat, cool and roughly chop.
2. Mix together yogurt, beetroot puree, chopped walnuts, chilli powder, cumin powder and salt in a bowl.
3. Add mint leaves, mix well and refrigerate to chill.
4. Garnish with mint sprig and serve chilled.
