For most, Skipjack Tuna are not the tastiest tuna. That title goes to Blue and yellowfin. But if properly bled to reduce the "fishy" taste caused by blood seeping into the muscle when the skipjack dies, I think that skipjack are delicious.
I apologize for what seems like a harsh way to bleed a tuna, but its either this or cut its gills with a knife. And it bleeds just as much.
