It's an easy book to read and the diet and lifestyle makes so much sense, on so many levels, it's definitely worth a read and some dietary experimentation if you are up for it!
There are so many "diet books' out there, and to me it seems strange, because surely there must be an optimal diet for human beings? I mean, every species on the planet has a specie specific diet that they thrive on. The same must be true for the human animal! Sure, we can survive on a lot of different foods, and we have been for quite some time, but our bodies are nevertheless ideally suited for a specific diet. This is a diet of mostly fruits, with the addition of leafy greens, tender vegetables, nuts and seeds.
Dr. Graham talks about the importance of eating WHOLE FOODS, rather than refined, FRESH FOODS because they are more nutritious, RIPE and well developed fruits and vegetables that have the full spectrum of nutrients, RAW FOODS because cooking destroys nutrients and creates toxins and of course ORGANIC FOOD that's grown like nature intended without toxic chemicals! It's a whole foods plant based diet. A vegan diet. A fruit based diet.
The 80 10 10 diet book is, despite the name, not just another fad diet book. By simple observations and scientific method we can conclude that the human anatomy and physiology is that of a frugivore. All animals in nature eat raw foods, one food at the time without mixing. What food would be naturally appealing to our eyes, sense of smell, touch and of course taste, in it's completely natural state without any form of processing? Fruit!
The book is an easy read, a guide to eating a low fat raw vegan diet, where 80 percent of your calories are coming from carbohydrates in the form of simple sugars, 10 percent of calories coming from fat and 10 percent from protein. This is an average over time, not necessarily something to be extremely strict with on a meal to meal basis, but a general guideline. There's no calorie restriction, you can eat as much as you want, allowing hunger to guide you. The fact that this diet is so satisfying and filling with all it's carbohydrates, water and fiber, makes it easier to not overeat, making weight control an effortless thing. Initially as people adjust to eating larger volumes of food, they typically experience some rapid weight loss as well, which for most people is much desired. This stabilizes as one learns to eat enough.
The high carb low fat (HCLF) approach is exactly the opposite of all the low carb diets so popular today. 80/10/10, commonly referred to as 811rv (80/10/10 Raw Vegan) focused mainly on carbohydrates, since this is our bodies preferred fuel, but there's plenty of protein and fat as well.
General dietary guidelines all stress the fact that we should get the majority of our calories from carbs, while keeping the fat intake fairly low, as low as 15-20 % is typically recommended. Sports science shows us however, that keeping the fat intake at or below 10% of calories improves physical performance, this is an indicator that less fat is better. We do need SOME fat however, and by eating lots of fresh fruits and greens, there's plenty of essential fats available. 10% of calories from protein is more than enough, especially when you think of a baby that grows so quickly, yet mothers milk is only about 6% protein!
Doug Graham is really into sports physiology, physical performance and fitness. He has trained many athletes and reports better performance across the board on a fruit based raw vegan diet. His book "nutrition and athletic performance" is great for people that are specifically into the science of sports nutrition.
It's essentially a modern, up to date, practical guide to eating according to the principles of natural hygiene.
