BRINJAL | BATU MOJU
Ingredients
500 grams brinjals
1 large onion chopped
2 split green chili
Rampe
Ginger crushed
Garlic crushed
2 teaspoons of mustard seeds crushed
3 tablespoons vinegar
1 tablespoons sugar
Turmeric powder
Crushed chili powder
Salt
Maldive fish( optional)
2 to 3 tablespoons coconut milk

Method
slice Brinjal length wise (1cm x 3cm) and mix with turmeric powder and salt. then deep fry it until golden brown. and put it to drain oil.
In a small bowl add ginger and garlic paste with sugar and mix well together with vinegar.
Heat a large pan add the fried brinjals and add all the ingredients and mix well. Finally add coconut milk. Mix slowly. Don't over cook. Keep in the heat for 2 minutes. And remove from fire and serve with rice.
