Apple Pudding Cake - is delicious, refreshing dessert great whenever i want something light yet perfect to satisfy my sweet tooth 😊 Soft, moist sponge cake, delicious sweet-sour apples, sweet vanilla-apple pudding and whipped cream together make heavenly combination. Serve it cold straight from the fridge. It's the best light treat for hot summer days 😍
Ingredients:
3 eggs, separated
pinch of salt
1/4 cup (50 g) sugar
1/3 cup (40 g) all-purpose flour
4 Granny Smith apples, peeled and grated
2 cups (500 ml) water
1 1/4 cup (250 g) sugar
1 (43 g) vanilla pudding (not the instant pudding)
little bit of water
3/4 cup + 2 tbsp (200 ml) whipping cream
Preheat oven to 350 F (180 C). Grease and flour the baking pan.
Peel and grate apples.
Beat egg whites with a pinch of salt.
Gradually add sugar.
Add egg yolks one by one.
Gradually add flour. Mix well to combine.
Pour the mixture into prepared baking pan.
Bake in preheated oven for about 12 minutes.
In a pot add water and sugar and bring to boil. After it boils, add grated apples and cook for about 2-3 minutes until apples soften and release their juices.
While the sponge cake is still hot spread hot apples over it. With the apples take some water too, not too much, just don't squeeze the excess water, to soak the sponge a bit and to give it apple taste.
Mix pudding powder with some water.
Bring water where we cooked apples to a boil again and add pudding mixture. Stir constantly. Few seconds after it starts to thicken up, remove from the heat. Pudding should still be runny. Pour it over apples right away.
WHEN THE PUDDING GETS COLD, whip up some whipping cream and spread it over the top.
Refrigerate the cake for minimum 4 hours. Serve it cold.
