A new style of katsudon has been popular in Japan since around 2022.
This is a new style of katsudon where sauce is poured on top of a fluffy, half-cooked omelet and a thick Tonkatsu(pork cutlet) is placed on top.
Because of this characteristic, it is called Tamago de Tojinai Katsudon(No topped with egg Katsudon).
It is said to have originated at two long-established tonkatsu restaurants in Tokyo, ZUICHO in Shibuya and Tonkatsu MARUSHICHI in Monzennakacho.
