Instructions:
Place the apricots in a bowl and cover them with hot milk. Let them soak for about 30 minutes to soften. Blend the mixture until it becomes smooth and creamy. You should have a lovely, velvety consistency with no lumps of apricots remaining.
Once blended, pour the apricot-milk mixture into small sized individual ramekins. You can use any size or shape of ramekins you prefer.
Cover the ramekins with a parchment paper and clean kitchen towel and place them in a warm location. The warmth will help the mousse set and thicken properly. You can put them in a slightly warm oven (turned off) or on a countertop near a heat source, but avoid direct heat. Let the mousse thicken for about 3 hours. During this time, the flavors will meld together, and the mousse will acquire a lovely texture.
After ~3 hours, remove the ramekins from the warm spot and refrigerate them for an additional hour or until completely chilled. They will continue chickening in the fridge.
Once chilled and set, your apricot mousse is ready to be enjoyed! You can serve it as is or garnish with fresh apricot slices, a dollop of whipped cream, or a sprinkling of chopped nuts for some extra indulgence.
