A traditional dish savoured by many, an old friend is here in the kitchen with me today to show me his family's secret recipe for Oyster Mushrooms (Ho See Fatt Choy).

Ingredients

15 dried mushrooms (medium sized)
15 dried oysters
20 grams dried sea moss
2 tbsp peanut oil
2 - 3 cloves of garlic
6 strips old ginger
300 grams pork belly
2 tbsp Chinese wine
2 tbsp oyster sauce
1 tbsp dark soy sauce
1 tbsp fragrant sesame oil
1 tsp salt and sugar
1 head of lettuce
1 head Chinese parsley
