Marinated Steak with Coconut Sriracha Sauce
Steak marinade:
½ cup pineapple juice
¼ cup rice wine vinegar
2-3 tbsp fresh grated ginger
3-4 cloves minced garlic
2 tbsp light brown sugar
½ cup soy sauce
1-2 tbsp chili garlic paste
Now grab your favorite steak, I’m going flank steak. Cut into ½ “ cubed pieces (this marinade works for about 1.5 - 2 lbs) Place these in a large bag or bowl with the marinade and let sit for a minimum of 1 hour.
Now cook in the airfryer on max crisp (450f) for about 8 minutes, tossing in between. (can also throw on grill or cast iron skillet)
* For more of a bang, use left over marinade and reduce down in a pan for extra sauce to top! 💥
While the steak is marinating, toss the broccoli and mushrooms in some oil and then Salt, pepper, onion powder, garlic powder, paprika, and chili spice. Throw these into the air fryer or oven to roast until desired tenderness.
For the coconut sriracha sauce:
¼ cup coconut milk
1-2 tbsp sriracha
½ - 1 tsp mustard
1 tsp soy sauce
1 tsp honey
1 tbsp almond butter.
Serve all of this over 1 serving or Rice noodles cooked to the box instructions.
Finish with sesame seeds and green onions to be fancy!
