Cheera Thoran, Kerala style Spinach Stir Fry.
It’s very healthy, spinach leaves are a good source of iron, vitamin c and A. They are low in calories.
Recipe:
Ingredients:
Bunch of red spinach
9-10 sliced shallots
2-3 tbsp Coconut oil
3 green chilli
4 garlic cloves
1/4 tsp turmeric powder
1/2 tsp cumin seeds
1/2 tsp mustard seeds
Method:
1) wash the spinach leaves throughly and let it dry and then chop them finely.
2) Grind coconut, cumin seeds, green chilli, garlic and turmeric powder into thick paste.
3) In a pan add coconut oil and mustard seeds, once the mustard seeds spluttered add sliced shallots and add little salt to cook fast.
4) Now add the chopped spinach and mix well.
5) Then add the coconut paste and stir throughly and close the lid and cook for 2 min in low flame.
6) Open the lid and mix well once again.
Cheera thoran/ red spinach stir fry ready to serve.
