Vegan cheese today generally sucks and the current production system for animal cheeses is unsustainable. What production technologies are going to give us the best of both worlds? Will AI help us find plant based ingredients that can replicate casein proteins or do we need precision fermentation to replicate casein protein? Or both?
In this video I look at two companies with slightly differing visions for how this will play out. New Culture is making cheese using precision fermentation technology where Climax Foods is making cheese using precision formulation technology aka using AI to find plant ingredients they can use to replicate the protein and make into cheese.
