Chapshuro is a traditional dish from the Hunza or Gilgit people of Pakistan, consisting of minced meat, tomato and onion filling wrapped in a dough and baked. Here's a recipe to make chapshuro:
Ingredients:
1 lb. ground beef, chicken or lamb
1 large onion, finely chopped
2 Finely chopped tomatoes
2-3 cloves garlic, minced
2-3 tbsp. vegetable oil
1 tsp. ground cumin
Salt and pepper to taste
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 cup water
Sauces based on taste
Instructions:
In a large skillet, heat the vegetable oil over medium-high heat. Add the chopped onions, tomatoes and minced garlic, and sauté until the onions are translucent and the garlic is fragrant.
Add the ground beef or lamb to the skillet and cook until browned, breaking up the meat with a wooden spoon as it cooks. Stir in the cumin, salt, and pepper, and cook for another 2-3 minutes. Remove from heat and let the filling cool.
In a mixing bowl, whisk together the flour, baking powder, and salt. Gradually add the water and knead the dough until it is smooth and elastic.
Preheat the tawaa/oven to 375°F (190°C). Divide the dough into small balls and roll each ball out into a circle, about 5-6 inches in diameter.
Mix the meat with the prepared paste. Place a spoonful of the meat filling in the center of each circle of dough, leaving a small border around the edge. Fold the dough over the filling to form a half-moon shape, and pinch the edges together to seal.
Place the chapshuro on a baking sheet and bake for 20-25 minutes, or until the dough is golden brown and cooked through.
Serve the chapshuro hot, with a side of sour cream or yogurt if desired.
