Sopas is a creamy macaroni chicken soup made up of different vegetables, elbow macaroni , meat and evaporated milk in a rich and creamy broth. Sopas is served mostly during cold weather.
Sopas recipe and procedure
2 cups Macaroni pasta
400 grams native chicken breast (shredded)
2 medium red onion (sliced)
3 cloves garlic (sliced)
8 cups water
1/2 tbsp. chicken powder
2 celery stalks (sliced)
1 pc carrot, sliced into strips
1 tbsp. margarine
1 pc small cabbage (sliced)
200 ml evaporated milk
salt and pepper to taste
How to cook sopas
In a pot, boil 400 grams native chicken with 1 clove garlic, 1 medium onion and 1 tsp. salt.
Cook until chicken is cooked through and fork-tender.
Slice 5 stalk of onion spring, 1 carrot, 1 small cabbage, 2 stalk of celery, 2 cloves garlic and 1 medium onion.
Remove chicken from the broth. Allow chicken to cool, pull meat from the bones, shred and set aside.
In another pot over medium heat, melt 1 tbsp. margarine. Sauté garlic and onion until tender, add shredded chicken and carrots, cook for about 2-3 minutes. Add celery and cabbage, season with pepper and salt then cook for 1 minute. Transfer in a bowl and set aside.
Using the same pot, pour chicken broth and 6 cups hot water, let it boil completely then add in macaroni pasta, cook according to package direction.
Add chicken powder and salt, stir to dissolve. Let it simmer, stir regularly for about 5 to 8 minutes until pasta is tender.
Add cooked chicken with vegetables then pour 200 ml evaporated milk.
Simmer until heated through.
Season with pepper and add salt according to your taste.
Serve hot, garnish with spring onions, chili oil and egg if desired.
