Arancini are crisp on the outside with a creamy, cheesy centre. Children and adults love these classic Italian rice balls. They are such a treat fresh off the stove, stuffed with glorious gooey cheese. Arancini are a satisfying treat – filled with rice, peas, Chadder and mozzarella cheese. Serve with marinara sauce, these are wonderful for lunch on their own or paired with a fresh green salad.
These tasty little croquettes are ideal for party buffets or as an entree to your evening meal. It'll also be fun to see the surprise on your guest's faces when they bite into these fried morsels — what a great alternative to using potatoes!

Ingredients:
400g cooked rice plain or pilaf ( use leftover rice)
1 cup boiled peas
1 cup boiled & shredded chicken
1 tbsp butter
1 tbsp oil
1 tbsp flour
1 cup milk
1/2 cup chicken stock ( I dissolve 1 tsp chicken bouillon powder in half a cup of warm water)
salt, black pepper, chilli flakes 1/2 tsp each or to taste
fresh coriander and green chillies
2 eggs
bread crumbs and dry flour as required
* Arancini are best served warm when they are creamy and cheesy in the centre.
* You can freeze these balls after coating them for future use.
* Best for a kid's lunch box, Ramadan snack, or for late-night snacking.
* I have used shredded Mozzarella cheese but you can Stuff each rice ball with a cube of mozzarella cheese.
* If you are vegetarian skip chicken and chicken stock to enjoy this yummy croquettes. ( instead add 1 boiled and cubed potato)
Tip: How to re-use oil
The oil can be reused twice because the Arancini Balls aren’t heavily seasoned with spices, as opposed to heavily seasoned food like Southern Fried Chicken which taints the oil with flavour.
To re-use the oil, cool it in the pot, line the mesh colander with a single layer of paper towel, and strain the oil. Store until required – personally would stick to savoury rather than sweet.
