The top sirloin cap, AKA picanha is a cut of beef first made popular in Brazilian steakhouses where it is skewered and cooked over an open fire. We are a long ways from Brazil here at Barlow BBQ but we wanted to try a recipe that would be similar to the traditional "churrasco" style.
