Over a bowl of home-grown mandarin oranges, the Chez Panisse founder discusses with The Longevity Project Chair, Ken Stern, how the fast food industry has not only affected the culture of consumption in the United States, but the expectations we hold in our day-to-day lives. “We were eating the values that came from the food. We all learned that food should be fast, cheap, and easy, and food has never been fast, cheap, and easy,” continues Waters. Yet, with more than 40 years of innovation in pioneering the slow foods movement, Waters’ insights on eating better, living better, and getting better food to more people can go a long way.
