These fries are amazingly crispy,tender and healthy. They are a great lower calorie alternative to fried potatoes. This is a very simple and quick recipe
1) Cut the zucchinis in 4 parts and dice them into thick sticks, approx. 1-2 cm wide.
2) Fill a deep plate with flour and set aside. Crack 2 eggs into a second deep plate and whisk them. Fill a third plate with the breadcrumbs.
3) Season the breadcrumbs witch a pinch of salt, pepper, paprika powder, garlic powder and oregano. Mix well.
4) Toss the sticks into the flower until they are thoroughly coated. Pull the zucchini sticks through the eggs, then toss them in the breading mixture until they are completely coated.
5) Line a baking sheet with parchment paper and preheat the oven to 200°C top and bottom heat. Cover the tray with the zucchini fries.
6) Bake them for 20 minutes then flip them and bake them for another 10-15 minutes until they are crispy, golden-bwon and crunchy.
7) You can mix a quick tomato sauce with 100g of canned tomatoes with a pinch of Salt, pepper, paprika powder, garlic powder, sugar, oregano if you like.

What YOU NEED (for 1-2 servings):
For the fries:
- 2-3 zucchinis
- 100g flour
- 2 eggs
- 100g breadcrumbs
- 60g parmesan
For the sauce (optional):
- 100g of canned Tomatoes
- pinch of Salt, pepper, paprika powder, garlic powder, sugar, oregano
- parsley for garnish
