Oven Roasted Pork Belly Recipe!

If you love Pork, like I do; this is for you my friend💪
Before you think about cooking this; Plan ahead! This Pork Belly came vac Sealed. After wiping the skin dry with a paper towel. I pricked tiny holes into the skin with a Jaccard (the tip of a sharp pointy knife will work). Place the Pork Belly skin side up on a wired rack, & left it uncovered in the fridge for 3 days.
Total Cook Time: 80min
ON COOK DAY:
Preheat oven to 180c
1. Prick Tiny Holes into the skin of the Pork (Yes, I double pricked😉)
2. Season the meat side with whatever you like. I used; a touch of olive oil as a binder, Garlic Goals @lownslowbasics as a base cover, Chinese 5 Spice, Dried Thyme, Black Pepper
3. Boat your meat with foil. I use the Costco food grade foil. It's thick which makes it alot easier to do.
4. Top the skin with Rock Salt
5. 180c in the oven for 60min
6. Remove the Pork Belly from it's foil boat, wipe off all the salt & dont forget to wipe the sides
7. Brush White Vinegar on the skin. Go over it a couple of times
8. Switch to Grill Setting at 250c with your oven rack furthest away from the heat. 20mins later & it's done!
9. Let it rest, tented with foil for 10/15min & slice!
