Spinach namul / Sigeumchi namul
Ingredients
Spinach----------------------------------------------------400g
To boil spinach
Water---------------------------------------------------------5 cups
Salt------------------------------------------------------------1 tsp
Sauce
Dark soy sauce------------------------------------------2 tbsp
Light soy sauce------------------------------------------1 tsp
Leek(or green onion), chopped------------------1 tbsp
Perilla oil (or sesame oil)---------------------------1 tbsp
Sesame seeds(toasted, par crushed)--------2 tbsp
Instruction
1. Trim the roots of the spinach. Wash several times. Chop leek(or green onion)
2. Bring water to a boil
3. Make a sauce. In a bowl add dark and light soy sauce, par crushed sesame seeds, leek and perilla oil
4. Blanch trimmed spinach in salted water for 30 seconds
5. Remove the spinach from the pot and shock in cold water to stop cooking and to keep crunchy texture
6. Drain and squeeze out excess water
7. Combine blanched spinach with dressing. Mix well
