•250-300g liver, cleaned and cut in pieces
•1-2 egg yolks
•100g heavy cream
•1-2 bacon strips (optionally)
•1/2 - 1tsp salt
•black/white pepper, garlic/onion powder (optionally)
•butter

Ingredients for 3x180ml ramekins

1. Preheat the oven to 180ºC-355F
2. Combine all ingredients, except the butter, in a food processor and process until smooth
3. Brush the ramekins with softened butter
4. Strain the mixture into the ramekins and top each ramekin with a piece of parchment
5. Put the ramekins in a baking dish, pour in hot water and bake for about 20-25 min
6. Allow to cool and remove the top piece of parchment. Pour over melted butter
7. Leave in the fridge for a few hours/overnight to firm up
