Chinese Red Spinach (aka Amaranth Greens or 苋菜) is a spinach streaked with red & purple. . It’s suppose to contain extra doses of iron, antioxidants, minerals and vitamins than your regular green spinach.

I just want to say that I forgot to record the last bit where I put in 1 sliced century egg and 1 sliced salted duck egg and a single beaten normal chicken eggs (hence the title 苋菜汤 not 金银蛋苋菜汤）.
