INGREDIENTS
For the Batter
4 Large Eggs
1 cup, White Sugar
1 cup, Brown Sugar
1.5 cups, Canola Oil
3 tsp, Vanilla
2 cups, Gluten Free Flour
2 tsp, Baking Powder
2 tsp, Baking Soda
1/2 tbsp, ground Cinnamon
1 tsp, Salt
4 cups, Grated Carrots
For the Cream Cheese Frosting
12 oz, Dairy Free Cream Cheese
4 tbsp, Dairy Free Margarine
2 cups, Powdered Sugar
2 tsp, Vanilla
METHOD
Preheat oven to 350 degrees. Grease a 13X9 baking pan with margarine, and line with parchment paper.
Whisk together Gluten Free Flour, Baking Powder, Baking Soda, ground Cinnamon, and Salt in a bowl. Set aside.
In a stand mixer fitted with the paddle attachment, add Eggs and Sugars. Whisk until pale, and then add Canola Oil and Vanilla. Continue whisking until egg mixture is fluffy and voluminous.
Slowly pour dry ingredients into the egg mixture, and mix until just incorporated. Fold in Grated Carrots by hand until evenly distributed.
Pour into prepared pan, and bake for 50-55 minutes, or until the middle has set and a toothpick comes out clean when inserted.
Set aside to completely cool to room temperature.
Combine ingredients for frosting in stand mixer, and whisk until smooth.
Top cooled cake with Cream Cheese Frosting, and cut into squares. Enjoy! :)
