Shanghai Veggie Medley Recipe

A unique and delicious vegetable medley consisting of Shanghai bok choy, hongxi mushroom and carrots. I love making dishes that have a variety of veggies to make it less boring, and add in more healthy veggies that you might not eat that often.

- 200g Shanghai bok choy
- 100g hongxi mushroom
- 1 carrot
- 1 tbsp pork fat, or avocado oil
- 1/2 tsp sea salt
- 1 cup of water (150ml)

PREP:
Wash & Chop the bok choy and carrots.
Wash & cut off the head of the hongxi mushroom and it’ll just separate it.

COOKING:
Heat the pan with the oil, and the put the bok choy and carrots first. Add 1 cup of water (150 ml) and cover for 2 minutes.

Add in the hongxi mushroom, and cover for 1 minute.

Uncover and add 1/2 tsp of sea salt. Mix well. And then it’s done!
