Today it’s the Blue Hawaii Cocktail: Classic vs. Elevated - with Blue Foam! Blue Hawaii is the perfect Tiki drink for Summer, but can we elevate this cocktail by turning it upside down? The original Blue Hawaii was created in 1957 in Waikiki, Hawaii, by Harry Yee, the head bartender of the Kaiser Hawaiian Village, which later became the Hilton. It is a well-balanced and undeniably intriguing cocktail, but I wanted to make my own signature version of this drink, by using two layers. The bottom part will be a milk-washed cocktail without the blue color and with a little saline solution, and on top we'll have a creamy blue foam with orange for a stunning presentation. Will we be able to make this blue, tropical cocktail in a way that could be served at high-end cocktail bars? We’ll give it a try, and if you want to see how it turned out, pull up a chair and get ready - it’s Cocktail Time!
