Gulab Jamun Recipe | Gulab Jaman with Lassa Khoya | How to Make Gulab Jamun at Home
Sugar Syrup : Put 3 cups sugar in 3.5 cups water and cook until sugar dissolves. Once sugar dissolves cook for 2-3 mins and turn off stove. Sugar syrup should be lukewarm when used later, not hot.
Gulab Jamun : 250 grams lassa khoya
1/2 whisked egg
5 tbs all purpose flour
1 tbs dry milk powder
1 tsp semolina
3/4th tsp cardamom powder
1/2 tsp baking powder
1 pinch ground nutmeg and mace
First rub and knead the khoya until it has a smooth texture and has no grain left. Then add egg, dry milk, semolina, cardamom, baking powder, nutmeg mace and mix. Then add flour bit by bit and mix until everything combines into a smooth dough.
Next, heat a pan with oil for deep frying and also add 2 tbs ghee to the oil. Keep the pan on very low heat.
Make balls out of the dough as per the shape and size you want and then deep fry them.
Make sure you keep the flame very low and when you fry the balls do not directly touch the spoon to the balls instead keep mixing the oil to automatically make the balls move. Keep moving the oil and the balls to give even color. If you let the balls sit for long they will get dark. Once you get the desired colour remove from oil and put them in sugar syrup.
Soak in the sugar syrup overnight or for 5-6 hrs atleast, at room temperature. Enjoy!
