I love pastry, who doesn't? And I really like French savoury pastries in particular. When I stopped eating eggs, cheese and dairy, quiche was the food I missed the most. Warm quiche with a cold salad, for me, is the perfect combo. Homemade vegan food, created and made with love so that everyone can enjoy it, is the secret to eating more plant based meals.
I don't want it to look or taste 'vegan' I want it to look and taste amazing! French style quiche has always been a favourite of mine, and with this recipe I can enjoy lots of different vegetable combinations using the same method. Try using only mushrooms or onions and you will be hooked on this vegan version for life. I like to eat it for breakfast too.
I really should have waited until it was cold before sampling my first slice, but I ate two slices before it made it anywhere near the fridge.
For the pastry you will need;
1 cup plant based butter - I am using Veganbloc 1 cup flour.
For the filling you will need;
1 packet of silken tofu, 1 tablespoon flour, 2 scallions/spring onions/1 zucchini/courgette, 1 carrot, 1 tablespoon olive oil, 2 cloves garlic, 1 teaspoon agar agar, 1 teaspoon vegetable stock powder.
