Ingredients:
Hot water for baking
Crust:
1 cup graham crackers crumbs
½ cup almond meal
3 tbsp unsalted butter, melted
Cooking spray
Filling:
1½ lb cream cheese at room temperature
1 lb yogurt or sour cream
1⅓ cups granulated sugar
¼ cup all-purpose flour
5 large eggs
2 tsp lemon juice
2 tsp vanilla extract
To Serve:
Roughly 1 oz whipped cream per serving
Roughly 1 oz fresh strawberry per serving
Roughly 1½ tbsp strawberry syrup per serving

Crust:
0:10 Combine all the ingredients in a large mixing bowl. Mix until the texture resembles wet sand.
0:26 Press the mixture onto the bottom and along the sides of a 9-inch springform cake tin and set aside in a chilled area. Allow to firm up, at least an hour.
Filling:
0:42 Preheat oven to 300 degrees F.
0:48 In a mixing bowl attached to a hand beater, cream together eggs and sugar until pale and fluffy, roughly 5 to 7 minutes.
1:00 Add the yogurt or sour cream, cream cheese, lemon juice, and vanilla extract. Continue creaming.
1:20 Fold in the flour until evenly incorporated.
Assembly:
1:32 Once your crust is firm, wrap the bottom of your cake tin with aluminum foil.
1:40 Pour your prepared filling into your crust.
1:49 Transfer into either a braising or roasting pan and fill it up with enough hot water to cover at least ⅓ of your cake tin.
2:00 Bake until a cake tester comes out clean, roughly 1½ hours. You may need to fill up more water while baking.
2:11 Once baked, set aside while still in the braising or roasting pan at room temperature to cool down completely.
2:19 Once cool, remove from the braising or roasting pan, and set aside in a chilled area until completely chilled and filling has set, anywhere from 6 hours to overnight.
2:23 Once chilled and set, remove from the springform brace. Portion accordingly. Garnish with whipped cream and your chosen fruit accompaniment. Serve.
