This Easy Healthy No Bake Cheesecake is a perfect dessert for spring and summer🐣 It is so refreshing and super creamy! The recipe is gluten-free & lactose-free and it contains no gelatine!😍
Crust:
1 cup almond flour (240 ml)
1/4 cup shredded coconut (60 ml)
3 tablespoons melted coconut oil or ghee
3 tablespoons maple syrup
Filling:
12 oz. / 350 g (lactose-free) light cream cheese
1 cup (lactose-free) Greek yoghurt (240 ml)
zest of 1 lemon
2 tablespoons maple syrup
1-2 teaspoons stevia (or more, to taste)
1 teaspoon vanilla extract
1. Mix the crust’s ingredients together. Line a bottom of a small springform cake pan with parchment paper and press the crust on top. Let set in the fridge while you make the filling.
2. Mix all the ingredients together. Pour the filling on top of the crust. Cover the cake tin and let set in the fridge for at least 8 hours, rather overnight.
3. Carefully unclasp sides of the cake pan. Serve with some berries, for example!
