Ingredients:
Arhar dal (black gram dal): 1/2 cup
Spinach (Palak): 1 cup, chopped
Turmeric (Haldi): 1/4 teaspoon
Coriander powder (Dhaniya powder): 1/2 teaspoon

Green chilies: 1-2, chopped (adjust to taste)
Garlic: 3-4 cloves, minced

Preparation:
Rinse the urad dal under running water until the water runs clear. Soak the Arhar dal in enough water for about 30 minutes. Drain before using.
Tempering:
Heat a pressure cooker or a heavy-bottomed pot over medium heat. Add a tablespoon of oil.
Add minced garlic and chopped green chilies. Sauté for a minute until fragrant.
Adding Spinach:
Add the chopped spinach (palak) to the pot. Stir and cook for about 2-3 minutes until the spinach wilts.
Adding Dal:
Add the soaked and drained Arhar dal to the pot. Mix well with the spinach.
Seasoning:
Add turmeric powder (haldi), coriander powder (dhaniya powder), and salt according to taste. Mix well to coat the dal and spinach with the spices.
Adding Water and Cooking:
Pour enough water into the cooker/pot to cover the dal and spinach mixture. Adjust the water quantity depending on how thick or thin you want the dal.
Close the pressure cooker lid. Cook on medium heat for about 4-5 whistles or until the dal is cooked and soft. If using a pot, cover with a lid and cook until the dal is tender, stirring occasionally.
Final Touch:
Once the dal is cooked, let the pressure release naturally from the cooker. If using a pot, check the dal for doneness. If needed, cook a bit longer until the dal is soft and fully cooked.
Serve:
Once done, open the pressure cooker carefully. Stir the dal well. Adjust the seasoning if necessary.
Arhar Palak Daal is ready to be served hot with steamed rice or roti. Garnish with fresh cilantro leaves if desired.
