Sesame Khachapuri Ingredients 1 cup warm water 2 1/4 tsp dry yeast 1/2 cup warm milk 3 tbsp olive oil 4 cup flour 1/2 tbsp granulated sugar 1 tsp salt For The Filling: 1 1/2 cup mozzarella cheese 1 cup feta cheese 1/2 cup parmesan cheese For The Top: Eggs Butter Instructions In a small bowl, combine the warm water, yeast, and pinch of sugar and stir. Let it rest for 6-7 min until fluffy. In a large bowl, mix flour, salt, and sugar. Pour warm milk, foamy yeast, and oil and knead for about 4-5 min. Cover the dough and let it rest for 20 min, and then knead the dough by stand mixer or hand for 4-5 min. Cover the dough with a clean kitchen towel and let it rest for 40-50 min at room temperature until double in size. Divide the dough into 4-6 equal pieces and roll each piece into a ball. Place the ball on parchment paper and cover it with a clean kitchen towel and let it rest for 15-20 min at room temp. In a medium bowl, combine all the cheese. Preheat the oven to 400F. Roll each piece into a circle or oval shape of about 9-10 inches. Arrange some of the cheese mixture in 2 rows and roll sides up over the cheese, forming a boat shape around the dough as in the IG Reel. Then stuff the khachapuri with the remaining cheese mixture. Cover with a clean kitchen towel and let them rise for 15-20 min. Brush with egg wash and sprinkle with sesame seeds. Bake for 17-20 min. Remove from the oven, make a well in the center of the khachapuri and crack an egg inside each well as in the Reel. (I only add the egg yolk and 1/4 egg white). Return to oven and bake for about 2-3 min. Remove from the oven and serve with butter. Bon Appétit!
